    Garlic has been recognised as a valuable ingredient in the fight against COVID-19. However, what looks to be a perfectly natural ingredient could be treated with chemicals.

    China is by far the largest garlic grower, producing about 500,000 tons a year. The next biggest is the US, with about 70,000 tons annually. Due to the reduced labour costs of manual processing that garlic requires, the bulk of the world’s garlic is produced in China, countries that accept imported garlic do so as it is cheaper. more

Egypt Opens the Suez Canal

March 08 1957: Following Israel’s withdrawal from occupied Egyptian territory, the Suez Canal is reopened to international traffic. However, the canal was so littered with wreckage from the Suez Crisis that it took weeks of cleanup by Egyptian and United Nations workers before larger ships could navigate the waterway.

The Suez Canal, which connects the Mediterranean and Red Seas across Egypt, was completed by French engineers in 1869. For the next 88 years, it remained largely under British and French control, and Europe depended on it as an inexpensive shipping route for oil from the Middle East.

In July 1956, Egyptian President Gamal Abdel Nasser nationalized the canal, hoping to charge tolls that would pay for construction of a massive dam on the Nile River. In response, Israel invaded in late October, and British and French troops landed in early November, occupying the canal and other Suez territory. Under pressure from the United Nations, Britain and France withdrew in December, and Israeli forces departed in March 1957. That month, Egypt took over control of the canal and reopened it to commercial shipping. Ten years later, Egypt shut down the canal again following the Six Day War and Israel’s occupation of the Sinai Peninsula. It remained closed for eight years, ending when Egyptian President Anwar el-Sadat reopened it in 1975 after peace talks with Israel.

RECIPE

MEMON AKNIE RECIPE

Boil the following in 2 cups water & keep covered:

  • 2 tsp whole jeeru
  • 5 cardamom pods
  • 3 to 4 cloves
  • 3 cinnamon sticks
  • 12 black peppercorns.

THEN…

  • Soak 2 cups rice in hot water and leave aside.
  • 1 chicken cut into pieces
  • 2 large onions finely chopped,
  • 1 cup oil and 1/4 cup ghee.
  • Braise onions, when onions are pinky gold add your chicken and
  • 1 tbsp.  ginger paste and 1 tbsp. garlic paste,
  • 1 tsp salt,
  • 1 ½ tsp jeeru powder,
  • 1 tsp turmeric.
  • Let it cook a bit then add 2 grated tomato with 3 tsp paprika and hot chili powder according to taste, and 2 tsp dhania powder.
  • Add 2 cups maas/sour milk, then add in the water of the soaked spices with cinnamon sticks and close lid of the pot, this gives it a lovely flavor.
  • Keep pot covered.
  • Add potatoes when chicken is half done.
  • Once potatoes are cooked add in raw rice, add very little water if needed.
  • Put in dhania and big sprig of mint.
  • Mix well and place in oven to cook. Garnish with fresh chopped dhania.
