Mini SWARMA / PITA

Ingredients
2 cups flour - 1 tblsp sugar - 1 egg - 1 tp instant yeast - ½ tsp salt - 2 tblsp butter /margarine - ¾ cup mixture milk and water.

Mix dry ingredients and rub in butter with fingertips. Add beaten egg and milk – water slowly until soft dough is formed. Allow to rise for 1 hour. Punch down and make small balls in palm of hand. (size of balls about R5 coin). Roll each ball to thickness of 5mm on a lightly floured surface forming a circle. Place on a cooling rack lined with baking paper & Spray & Cook. Cover rounds with a damp cloth and allow dough to rise to double thickness. Place cooling rack with dough onto an ordinary baking sheet and place in the oven heated to 200c. Bake for 10/15 minutes or just until pitas puff. Make a slit in pita and add filling and salad of your choice.

Junior had just received his brand new driver’s license. To celebrate, the whole family trooped out to the driveway and climbed into the car for his inaugural drive. Dad immediately headed to the back seat, directly behind the newly minted driver. "I'll bet you're back there to get a change of scenery after all those months of sitting in the front passenger seat teaching me how to drive," said the beaming boy to his old man. "Nope," came dad's reply, "I'm gonna sit back here and kick the back of your seat while you drive, just like you have been doing to me for sixteen years."
