O
Allah, forgive our living and our dead, those present and those
absent, our young and our old, our males and our females. O
Allah, whom amongst us You keep alive, then let such a life
be upon Islam, and whom amongst us You take unto Yourself, then
let such a death be upon faith. O Allah, do not deprive us of
his reward and do not let us stray after him. [Sunan Abi Dawud]

| RECIPE |
LABNEH
PITA SANDWICH (Safeera Kaka)
1 Lebanese pita bread, split in half
6 tbsp labneh (adjust according to the size of the pita)
1 Persian cucumber, sliced
5 grape tomatoes, halved
2 sprigs fresh mint (about 16 leaves)
5–6 Lebanese green olives, pitted
1 tbsp za’atar
1 tbsp olive oil
A pinch of flaky sea salt
1. Wash and prepare all the vegetables.
2. Split the pita bread into two circles. Use the thicker half
for the sandwich, placing it rough-side up on a plate or work
surface.
3. Spread the labneh thinly over the middle of the pita.
4. Sprinkle with flaky sea salt and za’atar. Drizzle with olive
oil.
5. Layer the sliced cucumber, halved tomatoes and fresh mint
down the middle.
6. Add the pitted green olives.
7. Fold or roll the pita gently and serve fresh.
*Tip:* Add extra za’atar and a drizzle of olive oil just before
serving for extra flavour.
